Roasted Tomatoes with Herbs & Mozzarella

I love roasted tomatoes, especially when their pockets are stuffed with a succulent Herbs & Olive Sauce and Mozzarella. Herbs & Olive Sauce is inexpensive and simple but yet offers a phenomenal result with each bite when mixed with tomatoes and mozzarella.

Roasted tomatoes give a colourful and zesty addiction on your dinner plate, the perfect combo for a steak and serving for an elegant lush dinner

Roasted Tomatoes with Herbs and Mozzarella

Ingredients:

  • Tomatoes cut into half or cut a thin slice off the top of each tomato
  • Herbs & Olive Sauce
  • Grated Mozarella
  • Olive oil
  • Salt & pepper

Preparations:

  1. Scoop out pulp inside the tomatoes, rinse and pat dry with paper towels.
  2. Add 1 or 2 tbsp of herbs & olive sauce inside each tomato. Sprinkle grated mozzarella on each tomato.
  3. Drizzle olive oil on top of each tomato and season with salt & pepper.
  4. Line parchment paper on baking tray, place the stuffed tomatoes and bake at 200 C for 15 mins.
  5. Garnish with parsley or basil leaves once our from the oven.
